Every neighborhood in Taiwan has a green onion pancake stand! They all have their own tastes and their secrets ingredients. Some are fluffy, some are way crispier, some add cheese on top, some deep fry with eggs. This green onion pancake is my to-go after school snack on my way home! It's drizzled with thick soy sauce and white pepper powder on top and bagged in a paper bag.  And my fav is those with LOTS and LOTS green onion and not so greasy but crispy on the outside! My suggestion is to make LOTS and you can always freeze them! 

小時候放學必買一個蔥油餅,而且一定要加爆多的醬油膏跟白胡椒粉。零用錢多一點的時候還要加顆蛋、夾起司、加培根!在這零下四十度的地方,連路邊攤都找不到,餐廳賣的又油也不像蔥油餅,只能自個而來做宜蘭三星蔥油餅!蔥越多香氣越濃郁,每一口吃得越爽,還不會一堆油上身!多做一些,冰冷凍,讓你隨時可以在家吃到香酥可口的宜蘭三星蔥油餅!

食譜 You will need...

For 12~14 green onion pancakes:

Dough: 
  • 800g all purpose flour
  • 360g boiled hot water
  • 200g cold water 
  • 10g salt
  • Olive oil

Stuffing:
  • 70g pig oil (pan fry a piece of fat pork belly!)
  • 3~4 stalks of green onion chopped (350g)
  • Salt 
  • Olive oil  

Optional to make it to a pork pie: prep a small bowl of ground pork, mix with 2 table spoon of soy sauce, 1 table spoon of cooking wine, pinch of salt, and the chopped green onion. 


14片蔥油餅粉量:

麵皮: 
  • 800g 中筋麵粉
  • 360g 熱水
  • 200g 冷水
  • 10g 鹽
  • 橄欖油
​
內陷:
  • 70g 豬油
  • 3 把蔥
  • 鹽 
  • 橄欖油
