Taiwanese Braised Pork Rice Bowl 阿嬤ㄝ滷肉飯

Cook time: Min 4 hours. The longer, the softer the meat, the thicker the sauce. 至少滷4小時以上,煮越久肉越嫩,汁越稠~
This recipe is THE childhood memory. Nana's recipe. I could literally eat up the whole rice bucket myself.

For 4 people 4人份:
The sauce 滷汁:i eyeball everything in this recipe. As grandma has her recipe book in her head! A rule of thumb, the liquid should just be a little bit over all the ingredients. Start with 1 cup of the coke and the soy sauce. Try the sauce, if you can taste the coke, add some soy sauce, and if it gets too salty, add some water. It should not be too salty as we need to braise this for a long time.
Optionals:
Can all one of these (or all!) Add these items (except the eggs) to the stew later on or it will get too salty. Add them into the same pot with pork and cook in over medium heat for roughly 40 minutes to an hour. Ready to serve after!
- 2 pork belly 2大條五花肉
- 4~5 slices of ginger.. 薑片4-5片
- 1/2 bunch of green onion. 4~5條蔥
- 1/2 cup of rice wine 半杯米酒
- 1/2 cucumber. 半個小黃瓜

- 1~1.5 cup of Coke or Pepsi (I prefer coke) 1杯可樂
- 1~1.5 cup of soy sauce. 一杯的醬油
- 2~3 table spoon of thick soy sauce 2~3大匙醬油膏
- 0.5 ~ 1 cup of water (if too salty) 半杯到一杯水

- 3 Carrots 胡蘿蔔適量
- 4 ~ 6 Boil eggs (boiled and peeled) 水煮蛋
- 1/2 daikon 菜頭適量
- Cut the pork belly in cubes. Pan fry them with no oil in high heat until crispy and golden on the surface. Roughly 3-5 minutes.
- Take the pork out and set aside. Dump the excess oil from the pork or save it in a container to make green onion pancake!
- In the same pan, high heat, fry the sliced ginger and white part of the green onion for 1 minute. Then add the rest green onion.
- Add the pork back into the pan. And pour 1/2 cup of rice wine over the pork with high heat. Fry for 1~2 minutes.
- Add the sauce in. Let it boil in high heat for 5 minutes. And then turn it down to medium-low heat, let it cook for min 4 hours.
- Check and stir time to time (30 minutes), try the sauce. If it gets too salty, add some water. If you would want more sauce, add more soy sauce and the coke. If you would like the sauce thicker, don't add more liquid let it boil longer, or you can add more sugar (or coke).
- Serve with steamed rice and sliced cucumber.
- 把五花肉切一口大小,免油大火直接煎至表面金黃,大約三至五分鐘盛盤。
- 把鍋裡的豬油倒掉,或是留下來等等可做蔥油餅用~
- 同一鍋子,下薑片與白蔥段大火爆香一分鐘,再加綠蔥段。
- 再把豬肉加回鍋子裡,下半杯米酒,大鍋炒1~2分鐘。
- 加入滷汁大火滾五分鐘。轉中小火繼續滷至少四小時。
- 每半小時看一下,試試看滷汁會不會太鹹,如果太鹹,加點水。如果想要多一點汁,加多一點醬油跟可樂~ 如果想要汁稠一點,讓他滾久一點,或加一點冰糖。
