Marinade 醃肉:
- 4 boneless chicken breast cut in cube approx 3x3 cm. 4大塊雞胸肉切塊一口大小~
- 4 cloves of garlic. Minced. 大蒜末4-5瓣
- 2 table spoon of soy sauce 2大匙醬油
- 2 table spoon of thick soy sauce 2大匙醬油膏
- 1 tea spoon of sugar 1小匙白砂糖
- 1 tea spoon of white pepper 1小匙白胡椒粉
- 2 tea spoon of Chinese five spice powder 2小匙五香粉
- 1 egg 1顆蛋
Fried 炸:
- Flour 麵粉
- Basil 九層塔
Steps步驟:
- Mix the Marinade ingredient together. Let it sit in fridge for 2 hours min. Can do 1-2 days ahead.
將雞胸肉醃至少兩小時,可在一兩天前醃好。 - Once it's ready, coat the chicken. And let it sit for 1-2 minutes. (VERY IMPORTANT)
取出雞肉裹上炸粉,放置幾分鐘反潮!放置幾分鐘反潮!(很重要講兩遍~~!!) - Coat it again with flour! (This is to help the coating stick with the chicken.)
見不到白色的粉就是已經返朝,在裹一次粉,這樣炸粉跟肉才不會分離~ - Heat the oil, roughly enough to cover the chicken, 170-180c, put the chicken in! Make sure the chicken are not on top of each other. Flip the chicken after 2 minutes. Fry until the skin become golden on both side, put the basil to fry for 10-15 sec. Let the chicken and basil sit on the paper towel for a minute or two. Then ready to serve!
熱油鍋170~180度,由大約跟雞肉高度一樣就可,下雞肉炸,炸大約兩分鐘翻面繼續炸,兩面皮都呈金黃色,就可下九層打炸10-15秒,呈盤放餐巾紙上吸油~
