Vietnamese Vermicelli 越南涼拌米粉

食譜You will need...

For one person 一人份:
The Body 主菜:
  • 1 Rice vermicelli 越南米粉 
  • 1/2 carrot 紅蘿蔔 or/and cucumber 小黃瓜
  • 1/3 bunch of spinach 菠菜
  • 1 pinch of sesame 白芝麻
  • sesame oil  麻油
  • Fresh cilantro leaves to serve 香菜
  • Fresh green onion to serve 青蔥
  • 1 spoon of chili lime peanut to serve 鹹花生
Sauce醬汁:
  • 1 table spoon of fish sauce 魚露
  • 1/2 whole fresh lime juice 新鮮檸檬
  • 1~2 tea spoon of fresh chili 辣椒
  • 1 pinch of garlic power 大蒜粉
  • 1.5 tea spoon of sugar白糖
  • 30 ml of water 水

Meat肉: 
Any meat would go great with this dish. Such as teriyaki chicken, beef, or lemongrass pork chop.  
I go with Taiwanese fried chicken! Go check out the taiwanese chicken recipe. You can marinate the chicken days ahead!

Steps步驟: 
  1. Soak the rice noodle in cold water for 10-15 minutes. 米粉泡水10-15分鐘
  2. In the meantime, boil hot water in pot, shred the carrots and cucumber. slice the green onion, and pick only the cilantro leaves. 
    在等泡米粉時,把紅蘿蔔、小黃瓜刨絲,青蔥切一切,香菜梗挑掉。
  3. Boil the rice noodle as instructed on the package. Roughly 5 minutes. Once it's ready, rinse the noodle over running cold water.
    將泡過水的米線滾水煮5分鐘至熟,立刻撈起沖冰水。
  4. Boil spinach in the same pan. Once it's ready, dump the water out of the pan, put it back on stove top, add a pinch of salt, a little bit of sesame oil and a pinch of  white sesame. Quickly fried for 30 secs. 銅鍋滾水主菠菜至熟,水到掉,加一點麻油快炒,撒上一點鹽,適量白芝麻。
  5. Drain the noodle, assemble the noodle with your choice of meat, spinach, shredded carrots, cucumber, green onion, cilantro and peanuts. 米線瀝乾裝入碗內,鋪上紅蘿蔔絲、小黃瓜絲、香菜、青蔥、花生以及肉。
  6. In a small bowl, mix all the sauce ingredients together. Pour it over the noodle when ready to serve! 
    再拿一個小碗再拿一個小碗,將白糖、開水、檸檬汁、魚露、大蒜粉、及適量紅辣椒碎拌勻,即成為越式涼拌醬汁,淋上醬汁後就開動啦。
